The mince's juices dissolve into the soup, and the impurities of the chicken paitan are adsorbed by the solidified mince, creating a clear, rich soup. This is called "Saotang" in Chinese cooking and "clarified" in French cooking. While this technique is often used in ramen shops these days, ours is the only one that uses chicken paitan as a base. Enjoy the contrast between its clarity and rich umami.

The soup is made by simmering sea bream from Uwajima, Iyo, until only the bones remain, and then further simmering sea bream in it. This is a method called "Yobidoshi" (calling back) used in making Tonkotsu ramen soup in Kyushu. By simmering the ingredients in dashi without adding water, a rich soup is created. Its taste is truly "drinking grilled fish". Although our shop primarily uses chicken broth, we don't compromise on seafood broth either.
