Yakitori
Instead of "grilling without burning," "the char marks are a sign of flavor." We condense the umami by braving the battlefield of fire and oil. This results in a grilling technique that seals in the juicy umami inside while creating a glossy exterior. Every skewer is a work of art. Generally, we pair salt-grilled yakitori with acidic white wine, and tare-sauced yakitori with mellow red wine. This is just a basic guideline, and you can enjoy various combinations of yakitori with different meats and flavors with various wines.

Sour
Founded over 100 years ago, "Chugoku Jozo" is a long-established brewery in Hiroshima Prefecture that has been producing Kōru (column-distilled) shochu. "Daruma Shochu," made with the famous pure water from the land of wasabi, is different from other Kōru shochu, with a mellow taste and no harsh "call" aroma. Only this "Daruma Shochu" pairs well with the carefully selected ingredients used in Miyagawa's sours!

Yakitori is a dish packed with the "umami" of Japanese cuisine. Sauvignon Blanc and acidic Austrian white wines pair particularly well with tare-sauced yakitori. For salt-grilled yakitori, Pinot Noir and red wines with delicate fruitiness are suitable.
