Doro-buta (Aged Pork) Limited Availability
Raised with care from piglets by Mr. Hirabayashi at the vast El Paso Pork Farm in Obihiro, Hokkaido, these pigs roam freely, developing lean meat with moderate marbling, and fat that is sweet and melts in your mouth. They are then aged for two weeks (loin). Individual dishes are 220 yen off.
Chiyogenbuta
Chiyogenbuta, raised with meticulous care from piglets using traditional methods by Mr. Okamoto of the Chiyo region in Iida, Nagano Prefecture. The fat is superb. Individual dishes are 220 yen off.
