Shinsouen's owner and head chef. Influenced by his father, who was also a chef, he followed in his footsteps. He studied under the master of Shanghai cuisine, Sun Guan Yi, learning traditional flavors and creative Chinese cooking. He has made numerous TV appearances and been featured in many magazines. A special-class dim sum chef with 30 years of experience specializing in dim sum. He also served as the head dim sum chef at a famous Sichuan restaurant in Yokohama Chinatown. He is particularly renowned for his dim sum wrappers.
