Chukasoba Umekawa
Umekawa Chuka Soba's Commitment to "Niigata" Soup Using dried sardines from Chiba Prefecture and Rishiri kelp from Hokkaido, the soup is chilled and then reheated just before serving and mixed with the tare to ensure the flavor is always at its best. Soy Sauce Tare Leveraging the characteristics of Niigata's five major ramen styles, we combine raw soy sauce from "Kyodo no Minori," a soy sauce born in Niigata, with usukuchi (light soy sauce) tare. Noodles Our thin noodles, medium noodles, and wonton wrappers are made with 100% "Banri no Sato" from Niigata Flour Mill. The noodles, made without any food additives using natural Mongolian kansui and mineral-rich sun-dried salt, are directly shipped from Raikami Noodle Factory in Niigata. Pork The minced meat for the wontons and the pork back fat are from Niigata Prefecture. They are finished with a tare that has been passed down since our training days at Raikami. Rice We use Koshihikari rice from Minami Uonuma, Niigata (or Akiwarawa from Minami Uonuma if supplies are low due to environmental conditions). It is sent directly from Niigata farmers after being polished to perfection using color sorters.
