Our Commitment to Rice ~Sourcing~ For the rice at Ginshari Honohomare, the chef personally selects it based on the condition that the "bran and underlying layer of the brown rice are removed cleanly". We source rice from producers of high-quality rice. ~Milling~ The reason for insisting on "clean removal of bran and underlying layer" is because "we want you to eat freshly milled rice". Using our in-store milling machine, we remove the bran (20%) from the brown rice. We mill "only 20 minutes before eating", and store it fresh, milling daily. ~Cooking~ We bring out the full characteristics of the rice. Notes Depending on the day's sourcing, the rice may be soaked in water for over 24 hours. As we cook after receiving your order, it may take some time. We may ask for your patience when serving the rice. We do not offer take-out rice.
