Along with "Sarashina" and "Sunaba," it is considered one of the three great soba schools. Yabusoba is characterized by its pale green noodles made from buckwheat flour that has not had its bran removed. The soba broth is strongly flavored with soy sauce and is salty. Therefore, the Edo-style method of eating soba, "dipping only a small part of the noodles into the broth," became established. Naminos' Style. Promise of Three Freshnesses 1.
