Motocho Kitaakabane




Established in 2013. This restaurant, run by the sibling of the owner of the renowned "Monju," also focuses on homemade noodles. Their exceptionally thin soba noodles have a superb texture and chewiness. The broth is made by combining the first and second dashi stocks from bonito flakes, Hidaka kelp, and shiitake mushrooms. The kaeshi is a blend of usukuchi and koikuchi soy sauces, concentrated for umami and continuously replenished.
