Irizake Ramen
煎酒ラーメン
Irizake is read as "irizake" and is a traditional seasoning based on pickled plums and katsuobushi, dating back to the Edo period. It does not contain alcohol. Please enjoy this delicate, restaurant-quality taste, unlike any ramen you've had before, with thin noodles and the paste of pickled plum placed on roasted seaweed.
The soup uses "Irizake," an Edo-period seasoning made by simmering sake with pickled plums and dried bonito flakes. It contains no alcohol. Characterized by the sourness of the plums and the umami of the dashi, enjoy the refreshing taste with thin noodles while dissolving the pickled plum paste on roasted seaweed into the soup.
