A specialty from Shanxi Province, China, Dao Xiao Mian (knife-cut noodles). Wheat flour dough is kneaded, and then shaved directly into boiling water using a special knife. Its origin dates back to the Yuan Dynasty (13th-14th century), when it was invented by artisans conscripted into the Shanxi army, who were captivated by the noodle dishes of the time. It is said that the knife-cutting technique was developed then.
