Pyeongyangok
Unlike regular broiler chickens, free-range chickens have a high collagen content, resulting in an excellent chewy texture. Pyeongyangok's Dak Gomtang, Dak Baek숙, and Hae Shin Tang are made with chewy free-range chicken, freshly boiled in a cauldron, and then simmered for 24 hours in a cauldron with domestic herbal ingredients such as Acanthopanax, Astragalus, Eleuthero, jujube, and ginseng, along with 17 natural ingredients, resulting in a rich and deep broth. The chicken fat is continuously skimmed off by hand, leaving the broth clear and free of grease. We arrive at 3 AM to boil the fresh free-range chicken, brought in from the farm, in the cauldron every day. We then hand-shred all parts of the chicken, including the thigh, drumstick, tenderloin, breast, wing, and neck, and serve them all in one bowl of Dak Gomtang. We also use clean, top-grade medicinal herbs such as Acanthopanax, Astragalus, ginseng, jujube, and balloon flower, which are not commonly found in Seoul, to brew the broth in the cauldron. Pyeongyangok uses only domestic free-range chicken and natural ingredients.
