Concentrated Chicken Broth The best quality chicken is used when preparing our highly concentrated broth by carefully boiling the chicken skeleton. If it is not done with care, there will immediately be some unpleasant smell. After this initial step aromatic ingredients are added, such as garlic, ginger and galangal. Then the chicken skeleton is boiled at a high temperature for 9 hours which is followed by a low temperature until the broth is sticky and concentrated and finally turns into Nanase Broth. This is real hard work but our guests' smile of enjoyment is certainty worth the effort we are pleased to make.
