Hitsumabushi
히츠마부시
This eel rice bowl, considered a specialty of Nagoya, is prepared by removing unnecessary fat by feeding the eel for three days, leaving only the delicious fatty components. It is then grilled with the restaurant's special sauce and served over rice.
This is a Nagoya-style freshwater eel rice bowl. Grilled eel brushed with a special sauce is served over rice. You can enjoy it in various ways: by dividing it into four portions and eating it as is, mixing it with green onions, seaweed, and wasabi, or pouring broth over it to make Ochazuke.
