Zucchini flower stuffed with ricotta, citrus, mint, and balsamic onion. Multicolor zucchini roses marinated in soy sauce. Reduced sauce with zucchini, habanero, and mustard.
Zucchini flowers stuffed with fresh cheese and herbs, served with marinated zucchini. A fresh, vegetal starter with sweet-sour and slightly spicy notes.

Veal tenderloin tartare. Prosecco and Campari spherification Toasted almonds, roasted melon, and balsamic-marinated egg.
Raw veal tartare served with Prosecco-Campari cocktail pearls and roasted fruits. A modern and sophisticated reinterpretation of the Turin aperitif.

Mackerel Tataki in acid osmosis Red onion 'saor' Artichokes marinated in mustard Scamorza cheese or barbecue.
Marinated semi-cooked mackerel plate, accompanied by sweet and sour onions and artichokes. A mix of marine and vinegary flavors inspired by Venetian antipasti.
