DRY AGING is a maturation technique that takes place in our controlled temperature and humidity cell, improving the tenderness of the meat and enhancing its flavor. Beef Bazaar is a permanent seat of the DRY AGING ACADEMY and offers new cuts every week with aging from 30 to 90 days, as well as extreme aging up to 180 days.
