The "Trifola" is an underground mushroom commonly known as Truffle. Despite the prevailing opinion that white truffle is the best of truffles, there are those who prefer melanosporum. The Truffle is an underground mushroom (living underground) shaped like a tuber, which lives in symbiosis with the roots of certain plants, such as holm oak, linden, sessile oak, hornbeam, and turkey oak. It has a fleshy mass called "gleba," covered by a sort of bark called "peridio." It consists largely of water, fiber, and minerals, organic substances provided by the tree with which it lives in symbiosis. Its shape depends on the characteristics of the soil in which it develops: soft soil will favor the growth of a spherical truffle, while hard, stony soil with many roots will favor a lumpy shape. To appreciate its aroma and taste, sliced thinly over hot or cold dishes. Ideal on fondue, "tajarin" (tagliolini), eggs, cheeses, or raw beef "all'albese."
