These pasta dishes are from Scott's apprentice memories! Back then, he was in Taiwan, learning from a Japanese chef from a Michelin one-star restaurant. What he learned, bit by bit, was not just technique, but also an attitude towards cooking. It wasn't the authentic Italian way, but the Japanese chef's own method, making Italian cuisine delicate, simple, and with a lingering aftertaste. It was the first time he felt that Italian cuisine could have more possibilities for fusion. Combining Italian savory notes, Japanese delicacy, and reinterpreting with good Taiwanese ingredients. We hope that what you taste is not just a mouthful of noodles, but a landscape carrying memories.
