INGREDIENTS FOR 4 PEOPLE * 4 Gourmet Collection tomatoes * 1 zucchini * 200g sprouts * 1 yellow bell pepper * 100g Feta or 1 small fresh goat cheese For the dressing: * 1 small bunch of fresh cilantro * 3 tablespoons olive oil * 1 tablespoon lemon juice * Pine nuts * Salt and pepper Using a vegetable peeler, make strips of bell pepper and zucchini of different sizes. Toast the pine nuts in a hot, dry pan. Wash and drain the sprouts. Cut the Gourmet Collection tomatoes into fairly thin wedges and the Feta into small cubes. Arrange the verrines with sprouts, and vegetable strips, then tomato wedges, Feta, and pine nuts. Dress with vinaigrette. Add chopped fresh cilantro to flavor everything!
