Khao Man Gai Betong Jang Jia Yee
Our restaurant uses Betong chicken directly from Yala province. The Betong chickens we use are exclusively free-range, foraging naturally for most of their diet. This gives Betong chicken from Yala a unique and distinct character compared to chickens from other regions. Betong chicken differs from regular chicken in its raising period; regular chickens are raised for about 45 days, while Betong chickens require 6 months to reach optimal quality. The meat is firm and springy, not chewy, and importantly, the skin is crispy with no underlying fat layer, which is a key characteristic of Betong chicken. We want everyone to enjoy our food as if they were dining in Betong, to truly experience the authentic local cuisine of Betong.
