Huang He Shu Yu Guan
The Story of the Yellow River Yellow River Shu Fish House originated in the 1960s, though the exact year is lost to memory. The second generation inherited it in September 1996, naming it Yellow River Shu Fish House for a reason. Many guests wonder why Sichuan and the Yellow River are not connected. They don't realize that the Yellow River in mainland China is muddy and turbid, making it unsuitable for most fish. Only carp can survive there. The Yellow River carp has four nostrils for expelling mud and sand, downward-facing eyes, and golden scales that protect its delicate flesh. Using Yellow River carp, seasoned with Pixian spicy bean paste from Sichuan, fermented glutinous rice, and traditional firm tofu, it is stewed. The meat is thick and extremely fresh and delicious.
