The owner, Masataka Shimoda, dreamed of opening a shop in this area, as Komazawa-Daigaku Station is his local neighborhood. He is meticulous about temperature control, even checking the heat with his own hands when warming sake. He calls aged sake, which he refers to as "brown liquid," "aged" even after opening the bottle, as it continues to mature and gain richness day by day. Its strong character allows it to withstand high temperatures, making it suitable for hot sake.
