Onions are lightly sautéed to preserve their texture and juiciness, and some are caramelized until golden brown to condense their sweetness, with both types added to the patty! Instead of breadcrumbs, we use 'fu' (wheat gluten), which has a higher water absorption rate. Using 'fu' maximizes the retention of the hamburger steak's juices! The salt for our hamburger steak is a mineral-rich rock salt born from ancient seas, a salt from a 5 million-year-old lake in Australia, which enhances the deliciousness of the hamburger steak. We carefully and slowly grill each patty in a frying pan. While it takes time to cook, the exquisite grilling cannot be achieved without a frying pan.
