

All our dishes and desserts are homemade. Our noodles are made on-site from wheat grown in the Kodawari field in Acy-Romance, cultivated by Jean Potier. He produces our ramen flour using his new mill located in the middle of the fields. All our broths are made on-site with chickens from the Luteau farm, a family farm since 1953 from the Loiret region. Grégoire and Bertrand PERICAT produce their own cereals and raise high-quality chickens. Our pork is Iberian Pata Negra Cebo de Campo, which comes directly from Spanish farms in Salamanca. It is the wagyu of pork. We are passionate about ramen. We create our own recipes while respecting the DNA of the dish learned in Japan. Much work is done to extract the most umami possible from natural ingredients, patiently selected in France and Japan. With the challenge of never using glutamates or flavor enhancers in our recipes. Ramen is a little over 100 years old in Japan. There are as many different types as there are ramen chefs, all respecting the 5 elements that are the DNA of the dish: Soup - Noodle - Tare (sauce) - Toppings - Oil.
