We use freshly slaughtered, electrically processed duck, ensuring fresh meat, sweet broth, crispy skin, and non-astringent meat. We also pair it with handmade, chewy thin pancakes. We select premium Sanxing scallions from Yilan year-round, high-quality sweet onions from Pingtung County, Taiwan, and a rich, pure sweet bean sauce made with various Chinese medicinal herbs. The duck bones are stir-fried over high heat with basil, complementing each other, and the duck bones are enveloped in the aroma of basil.
A typical Taiwanese "one duck two ways" dish. The first way is "Peking Duck Style", where the golden, crispy duck skin and juicy duck meat are sliced and wrapped in thin pancakes with sweet bean sauce, scallions, and onions. The second way is "Stir-fried Duck Bones", where the remaining duck frame is stir-fried over high heat with basil, garlic, and a special sauce. It is rich in aroma, savory, slightly spicy, and perfect with drinks or rice.
