It is characterized by its raw, invigorating mouthfeel and fresh taste, unique to freshly pressed raw genshu sake. 1. Wakayama Prefecture, Kido KID Junmai Ginjo This sake, made from Gohyakumangoku rice, has a light overall character. Upon tasting, you first perceive a clear sweetness, followed by a crisp, refreshing acidity.
