Thus, we arrived at a 'unique flour' created solely for Yasubee. To create exceptionally 'delicious noodles', we blend over 4 types of carefully selected premium flours in exquisite proportions. We particularly use varieties with excellent viscoelasticity to achieve a unique chewy texture while retaining the firmness that is no longer common in Chinese noodles. Furthermore, because we primarily blend the white part of the endosperm, which yields only a small amount from the grain, it also features an exceptionally excellent color. 70 Years of Experience and Confident Manufacturing Methods Flour alone does not complete the noodles. The second aspect of Yasubee's passionate dedication to 'noodles' is the 'manufacturing method'. Yasubee's 'noodles' are made in cooperation with a long-established noodle factory with 70 years of history. The reason we do not manufacture in-house lies in noodle management. Japan is a country with distinct seasons. The condition of the noodles changes daily with the temperature and humidity of each season. Selecting the appropriate technique for the day and adjusting the aging time... This skill cannot be built overnight. The 'noodles' we recommend are not made by a standardized, uniform method, but are carefully managed through the 'craftsmanship' of a long-established noodle factory that has evolved uniquely while inheriting traditional techniques.
