It is prepared by boiling pork bones for about 24 hours, resulting in a dense and creamy consistency and a rich, deep flavor. 2. Tonkatsu Sauce: Completely vegan, this sauce accompanies vegan dishes. It is made from vinegar, tomato paste, apple puree, spices, carrot extract, and onion. 3. Chashu: A traditional Japanese preparation of pork belly, marinated and slow-cooked for hours. This long process makes the meat tender and flavorful. 4. Hotategai: Scallop-based broth, enhancing marine delicacy with a sweet and refined note. 5. Naruto: A swirl-shaped decoration made from fish paste called kamaboko.

The noodle base for all our ramen is handmade with soft wheat flour, whole wheat flour, fresh eggs, and tapioca flour.
