The secret of aging: Dry aging is a method of storing beef, originating from North America over a hundred years ago. Beef is stored without vacuum packaging in a temperature and humidity controlled aging room with air circulation. The beef's natural enzymes and microorganisms work to tenderize the meat fibers. As the surface is in direct contact with air, the surface moisture reduces, creating a dry-aged state like a protective layer. This concentrates the marbling and enhances the beef's flavor and aroma.
Meticulously crafted in Taiwan's most advanced aging room, designed specifically for the local climate. Our unique dry-aging technology leads the industry, offering exceptional quality and flavor.
