Chicken mince is added to the prepared chicken paitan and simmered over high heat. The mince's juices dissolve into the soup, and the impurities of the chicken paitan are adsorbed by the solidified mince, creating a clear, rich soup. This is called "Saotang" in Chinese cooking and "clarified" in French cooking. While this technique is often used in ramen shops these days, ours is the only one that uses chicken paitan as a base. A rich, milky-white chicken soup (Tori Paitan) made by boiling chicken bones until they release collagen. It has a creamy texture similar to pork tonkotsu but with a lighter chicken flavor. Seasoned with onion, garlic, butter, and white soy sauce.
The soup is made by simmering sea bream from Uwajima, Iyo, until only the bones remain, and then further simmering sea bream in it. This is a method called "Yobidoshi" (calling back) used in making Tonkotsu ramen soup in Kyushu. By simmering the ingredients in dashi without adding water, a rich soup is created. Its taste is truly "drinking grilled fish". Although our shop primarily uses chicken broth, we don't compromise on seafood broth either.
