Making sake more accessible and casual. All our Doburoku is brewed in-house in small batches with care. We focus on bringing out the rice's umami, gentle sweetness, and the flavors of each ingredient.
Plain
プレーン
Recommended for first-time visitors. Made with Yamada Nishiki rice grown in our own fields in Wakayama Prefecture. It has the umami of rice yet a clean taste with low alcohol content.
Doburoku is a classic style of unrefined sake. It is cloudy with rice solids, offering a creamy texture and sweet-tart flavor similar to yogurt or Makgeolli. This plain version highlights the natural sweetness of Yamada Nishiki rice.
Adzuki Beans
小豆
A gentle aroma that evokes nostalgia, with the warm flavor of adzuki beans. A sophisticated Japanese sweet.

Black Beans

A familiar taste created by using plenty of fragrant black beans and retaining their hearty texture. Pairs well with handmade sesame tofu.

Hops

A harmonious blend of hop freshness and rice umami. Uses citrus hops, the same kind used in Heiwa Craft.

White Koji

A light Doburoku with a refreshing, tart flavor, using white koji (which produces citric acid) in addition to the yellow koji typically used in sake.
