~ ANSWER TO THE ANTHROPOCENE ~ Our Story: The planet is facing unprecedented climate change with a current trajectory to between 2 and 3 degreesCelsius temperature increase by end of the century. The world agreed in Paris at COP21 to make the changes necessary for us to limit temperature increase by end of the century to 1.5 degrees. This restaurant is our small contribution to helping reach this goal. Our Solution: Low carbon footprint foods are part of the answer. Along with reducing food waste and focusing on intensifying agriculture production rather than extensive practices that lead to forests being converted. While there is plenty of space to reduce the carbon footprint in our menu further, we realize that for most of us this is a journey and we want to ensure the highest taste experience as well as making sure that there are accessible dishes for all of our customers - no matter where they are in their journey.
