Perfect egg, caramelized onion purée, grilled leeks deglazed with Banyuls vinegar, guanciale, Comté foam, and meat jus.
An egg slow-cooked at low temperature for a unique creamy texture. Served with a sweet onion purée, crispy Italian bacon (guanciale), and a Comté cheese foam.

Seasonal mushrooms and apples deglazed with cider vinegar, hazelnut pieces, mushroom purée, Jerusalem artichoke velouté, and Port jus.
An autumnal starter featuring mushrooms in various textures (whole and puréed). Accompanied by tart apples, crunchy hazelnuts, and a rich Port sauce.
SEA BREAM

Sea bream gravlax torched, passion-soy vinaigrette, exotic condiment, carrot pickles, avocado guacamole, and wasabi sesame seeds.
