Beef: Blonde d'Aquitaine cattle raised outdoors in Moselle, aged 3 to 5 weeks depending on the cut. Red label "Label Rouge" duck from Chalosse from Maison Paris. "Label Rouge" chickens from Auvray volailles. Other meats, poultry, and charcuterie come from Maison Conquet and neighboring farms in Aveyron. Our fish are delivered by Jocéane. Our frogs primarily come from Turkey. Our fruits and vegetables are seasonal. Sturgeon rillettes and caviar are supplied by Maison Neuvic in Aquitaine. Our cheeses are selected and aged by MOF Laurent Dubois. Ice creams are made by Enzo & Lilly.
